The evening begins at 5:15 PM with pre-show activities. Guests receive leis, watch (or participate in) traditional Hawaiian crafts, play lawn games, and observe the imu ceremony -- the unearthing of a whole kalua pig that has been slow-roasting in an underground oven since morning. The pig is dramatic and educational, and kids gather around to watch.
The buffet dinner features traditional Hawaiian food alongside more familiar fare. Kalua pig (the star of the imu), lomi salmon, poi, sweet potato, chicken long rice, teriyaki chicken, and fresh Maui pineapple are served alongside rice, salad, and bread. The food quality is above typical luau standard.
